From the Business:Indian food is ancient, diverse and steeped in tradition, an amalgam of different ethnic influences, much like the country itself. In olden days in rural India - an agricultural society - the men would generally go to work in the farms while women would take care of the home. In the evening, the women would make daal or sabzi (entree) at their home on a chulha (earthen stove), but for making rob (bread) especially on a tandoor (earthen cylindrical oven), it was inefficient for every home to heat up their own tandoor. This was because it took a long time and lots of effort to get the temperature right, not to mention that not every woman was an expert in the field. So, the tradition was that all the women would take Atta (wheat flour) from their home and cook all the robs together at one place. The homes that had tandoor would take turns in hosting the rob-preparation ritual. When the weather was inclement, chulha would be used to cook robs. While cooking, they would also discuss - let's just say everything under the moon. This made it an ideal community place to exchange stories from all around the village, and beyond. This practice not only served as a means to get work done together but also tied the society together.Read more
