My name is Ashley Amin, Chef and owner of the Fusion Food Truck. I specialize in Indian, Thai and Mediterranean cuisine. My mother taught me the basics of Indian cooking. I built upon that and mastered my craft. I’ve been a chef for the last 22 yrs. and in that time I have co-owned up to 5 restaurants in San Diego. In my career, I have had the priviledge to cook for the Dalai Lama, King of Jordan, Denzel Washington, Philip Rivers and Woody Harrelson. In 2009, I was honored as the Top Indian Chef in San Diego. When I got married in July of 2012, my husband and I came to Jacksonville. My husband Dee (who is the greatest sous chef) and I serve our specialty food on our food truck by “fusing” the main flavors with only the freshest ingredients. We continually share our unique flavors and fresh dishes with our customers at the truck. I love sharing new flavors with them. Amazingly, most people have never tasted curry! When asked about my favorite dish that we serve, it is hands down the Drunken Noodles sweet,spicy and sour. We love to cater for private events and share our unique flavors.
